Beef and Onions on Rice (Gyudon)

Cooking time : 5 minutes
Ingredients :
2 teaspoons oil 1/2 cup thinly sliced onion, about 90 g
250g beef steak or shoulder, thinly sliced 1/2 teaspoon dashi powder dissolved in 125 ml water
2 tablespoons soy sauce
3 tablespoons sake 1/2 teaspoon sugar
5 cups freshly cooked Japanese rice
2 tablespoons red pickled ginger
2 eggs, beaten (optional)
Method :
Heat oil in a frying pan or wok over high heat and cook onion for 1 minute or until transparent. Add beef and cook until beef starts to brown.
Add dashi mixture, soy sauce, sake and sugar and stir to combine. Cook for 3-4 minutes or until beef is done and liquid starts to thicken.
Fill four bowls with cooked rice, divide beef among bowls and spoon over a little cooking liquid. Serve topped with pickled ginger and half a beaten egg poured over the top of each bowl, if desired.
