Creamy Crab Croquettes

Ingredients :
500g potatoes, peeled and diced
1 medium onion, finely chopped
250g fresh, canned of frozen crabmeat, drained, thawed and picked over
1 stalk spring onion (scallion), finely chopped
60ml fresh cream
11/2 teaspoons salt
1 teaspoon pepper
60g plain flour
1 egg, lightly beaten with a dash of water
60g breadcrumbs
oil for deep-frying
Method :
Boil potatoes in lightly salted water for 10 minutes or until tender. Drain well and mash until smooth.
Add onion, crabmeat, spring onion, cream, salt and pepper to taste, and mix well with the mashed potatoes. If necessary, place potato mixture into a small baking tray or shallow bowl and freeze for 10 minutes or until mixture is firm.
Season the flour with salt and pepper then set aside on a plate.
Form the potato mixture into patties 6 cm across and 3 cm thick. Coat each patty with flour, then dip in the beaten egg mixture and coat in breadcrumbs. Prepare all the patties the same way and set aside on a tray.
Heat a saucepan over medium heat. Add oil and heat to 180 ˇăC or until bubbles form around the edge of a wooden spoon lowered into the oil. Fry croquettes until golden brown, turning once. Drain on absorbent paper and serve warm.
