Katsuo (Bonito) Dashi

Freshly shaved dried bonito (katsuo-bushi) is used to make this standard stock for soups and sauces. The 'first' Katsuo Dashi has an incomparable aroma and is often used in clear soups and miso soups. The second dashi has a weaker flavour and is often used in stews, or combined with other stocks. The dipping sauce for tempura also uses Katsuo Dashi.
Makes 4 cups (1 liter)
Ingredients :
8 cups (2 liters) water
50g katsuo-bushi (dried bonito) shavings
Method :
To make the first Katsuo Dashi, bring 4 cups (1 liter) of water to the boil and add the katsuo-bushi shavings. When the katsuo-bushi shavings float to the surface, remove from heat.
Drain the Katsuo Dashi into a pot. Set aside. Keep the katsuo-bushi shavings for the second stock.
To make the second Katsuo Dashi, use the leftover shavings from the first dashi and repeat with another 4 cups of water. Keep the stocks separate. Depending on the dish you intend to make, use one stock and keep the other refrigerated in a ceramic or glass bottle (it will only keep for a couple of days).
